Apple cinnamon muffins

Hey readers,
well I don´t know about you but Christmas always reminds me of Cinnamon and warm applesauce. mhh I just love that smell! Nothing is better than a yummi ovenapple with cinnamon!
But today I got some yummi and healthy apple cinnamon muffins for you. So if you´re invited for a little Christmasparty I can tell you can totally make these muffins! It is a reciepe so everybody can taste them unless one of your friends is algeric to soymilk but it doesn´t matter just change the milk :D

ho ho ho here we go ;)

You need for 10-12 muffins:

  • 200 gr spelt flour type 630
  • 50 gr brown sugar (or stevia)
  • 1 pack vanilla sugar
  • 1 pack backing powder
  • 1 Tbsp cinnamon
  • 125 ml soymilk
  • 125ml oil (olive -or rape oil) 
  • 1-2 apples
  • some walnuts (not necessary)
  • 12 muffinforms



How to do:

  1. mix all the dry ingredients together
  2. add the oil and the milk and stir it well
  3. peel your apples and cut them into small pieces
  4. add them to the dough and stir it well
  5. heat your oven to 180 degrees
  6. put your dough into your forms and bake them for about 15min.

Christmas cookies

Hey followers,
well Christmas is only two weeks away and then we all get our presents. wuhu what is on your Christmaslist? Honestly I don´t have one this year Ooops shame on me.
But did you already bake some cookies?
I did and today I gonna show you a new reciepe (vegan). They are very very easy to bake so hurry up and bake some cookies and give them to your lovelies or just eat them all alone haha

hey there :)


Ingredients you  need for about 40-50 cookies:

  • 200gr spelt flour type 630
  • 40gr stevia sugar
  • 100gr vegan / plant butter
  • 20ml soymilk
  • dark vegan chocolate
How to do:
  1. mix the spelt flour and the sugar together
  2. add the soy milk
  3. add the cold butter an mix it to a dough
  4. roll your dough as thin / thick as you like it
  5. punch your biscuits
  6. heat your oven to 180degrees and bake them for 12 min.
  7. melt your chocolate within a water bath 
  8. decorate your cookies
& enjoy them!

iChoc

Hey people,
ATTENTION!! for everyone who loves chocolate keep on reading!
Today I had a quick trip to the city and I was looking for new stuff & then I found some yummi chocolate called iChoc. No no not iphone or ipad and so on but iChoc!! ;)

But what the heck is iChoc?
It is a new label based in Herford (Germany) which produces vegan chocolate. I didn´t wait long and bought the Choco Cookie and I loved it! Next time I ll buy them all. haha as they aren´t very expensive -> 1,95 euros for 80gr.
The ingredients are good only -1 that they use palm fat.

At the moment there a 4 different tastes:


  1. almond orange
  2. choco cookie
  3. white nougat crisp
  4. white vanilla

November Review

Happy 1st december readers!
I hope your start into our last month of the year and for some of your probably the most  beautiful one as great. Before all the christmas posts an present reviews I thought that we shouldn´t forget what happened in november.
So today I just want to show you what my november was all about and I´ll relink you my november posts. So keep on reading ;)

Well when I look back my november was quite stressfull as I had so much to do for university that I only went to the gym once. So december will be better. I swear, ´cause after all this yummi christmas food I m sure I ll gaint at least 2 pounds haha but hey Christmas is only once a year ;)

Vegan ginger cupcakes

Evening,
todays post is again something yummi ( haha I think I create and try way to much reciepes).
As for me Christmas without ginger isn´t really Christmas. Mhhh do you smell the yummi gingerbread smell??  I thoght that I would bake something that is traditional Christmas
I was looking for a vegan reciepe for ginger muffins. As I have never ever made gingerbread or cupcakes before, I was very suprised when I found a simple and quick reciepe by Jamie Oliver. yeah!
I changed some ingredients as I couldn´t find the, and I had no soy milk an yoghurt at home.



Ingredients:

  • 350 gr  plain flour
  • 2 Tbsp baking powder
  • 1Tbsp ginger
  • 1 Tbsp of cinnamon
  • 220 ml of vegetable oil
  • 120 ml coconut milk (or soy milk)
  • 5-10 walnuts

How to do:
1. mix everything together
2. crush your walnuts and add them to the dough
3. put the dough into muffin forms
4. heat your oven to 180 degres and bake the muffins for 10-15min,

TIPP:
if you like dark chocolate then melt some 70% cocoa chocolate and use it as topping for you ginger cupcakes

Boyfriend Advent calendar


Only 37 days until Christmas and I am already freaking out,
after summer, Christmas is my favorite time of the year. Even if I don´t like snow (well only when I don´t need to go to school or work) I always wish for a white Christmas. Ahhh got already some christmas songs in my head.

But before we can enjoy Christmas with the family there is always the presents rush. I always feel like I m in the Hunger Games. Everybody wants the perfect present for their loves. First question we always ask: What do you want for christmas?? & they never know...yeah!

Fortunately my boyfriend isn´t such a person. He ALWAYS knows what he wants for Christmas it is his favorite time of the year. He knows at least 1 present or 2? or 3? or perhaps 100? :D haha just kidding.

This year I decided to do a little advent calendar for him with some small and some big gifts.

He doesn´t like trashy stuff so I kept the wrapping design quite simple.

All I needed:

  • 24 brown sachets
  • 24 numbered stars (red and green)
  • 1 plott of cord
  • 1 plott of red feltcord
  • 4 reindeer clips (for special days end gifts)
  • 1 roll brown wrapping paper

In every sachet I put a present and for bigger ones I needed some brown wrapping paper. On every sachet is a star with the date. With the cord I made a traditional present loop.
For 4 special days I clipped a reindeer clip on the present

The special days are.
  • 6 December- St. Nicolas
  • 10 December- 4 years anniversary 
  • 16 December- Relase of Star Wars 7
  • 24 December - Christmas


But what did I buy for my love?
I don´t know exactly which present I wrapped for which day ( haha oops) but here is a list what I bought:

Kinder chocolate
Nuts (jep he asked me for nuts (;

Apple roses

Hey followers,
well my week is almost over and I am happy when my weekend starts tomorrow.
This morning I had nothing for breakfast so I created something yummi.

I saw so many reciepes how to do these apple roses but I didn´t try to do some. So today was THE day and as I wanted to keep it almost clean and simple I only needed 4 ingredients. They are very easy to do and a perfect as a little snack when you have guets or as a dessert with some ice cream.

What you need for about 12 roses:
  • 1 apple
  • 1 roll puff pastry ( I took a vegetarian)
  • 1 pot applesauce ( or you can do some yourself just click here to get my reciepe)
  • cinnamon
  • 12 muffin forms


How to do:
  1. Cut your puff pastry into 2-3 cm wide long stripes
  2. Mix your apple sauce with some cinnamon
  3. Put some apple sauce on your stripes
  4. Wash and cut your apple into very thin slicess 
  5. Put them on your pastry, add some cinnamon if you like and ond roll together
  6. Heat your oven to 200 degrees
  7. Put your roses in muffin cups and bake them for 10-15 minuts
& enjoy! I prefered eating them while they are hot and for some sweetness add some powder sugar :)

TIPP: I splitted the pieces  and put them with the tip pointing upwards

Jay & Jay review

hey readers I hope your friday will be great,
yes the week is almost over and our beloved weekend is only a few hours away from us.

Todays post is a little review of a restaurant I´ve been on thursday with my lovely friend Vanessa.
I have to tell you the story how we ´landed´ in this restaurant. First we decided to have a cheatmeal at Pizza Hut. So we wanted to order one Cheesy Crust pizza for two and the waitress was so unfriendly when we asked something that we left.
SO NO FOOD.

I proposed to Vanessa that I know a new restaurant called ,,Jay & Jay Fresh Foods´´ but I haven´t been there yet & so we had lunch at this new place.

It is a father and son restaurant and at the moment there are only two. One in Saarbrücken and one in Hermeskeil (GR). So lucky me!  Their food is all homemade and they grow their own vegetables.. The meat is regional,  homemade and low in fat and salt. They don´t use chemical flavor enhancers or genetic changed ingredients. Click here to check out their page.
So sounds really good and so it was/is!

When we came in we had to go upstairs to the 2nd floor. The entire restaurant has a beautiful vintage country style. Big windows lighten up the room and everything is made of wood. You have stools with cowprints and some shelves with empty colorful glas bottles.
The waitress was really friendly and explained everything to us.
The menu is not that big but enough and not very expensive.
You can order;

  • starters
  • big salads
  • different kinds of burgers with and withour bun: meat (beef, lamb, veal, chicken), fish (salmon), veggie and vegan
  • Some side dishes such as sauces which are all vegan
  • for the startes, burgers and salads they also have vegan meals
  • slow coked meals
  • quiches
  • and desserts
Vanessa ordered a cheese burger with some extra bacon and I ordered a vegan burger with both had fries as sidedish and I had vegan mayo and vanessa a herb dip.

I am very satisfied. We didn´t wait long, the food was hot and very good an everything tastes great. The vegan pattie was made of lentils, peas, pumpkin, sweet potato and leek & i loved it.
The mayo was also vegan and made with soymilk.

I hope when you are once in Saarbrücken you step buy cause is good and healthy food for little money. ( I had for 11,30euro)

Pumpkin muffins

HAPPY HALLOWEEN EVERYONE!

I wanted to show you these yummi muffins sooner but unfortunately I had no time.
So if you are a having a party at your home tonight or you wanna have some pumpkin muffins for breakfast a got a healthy and simple reciepe!
It is very easy & vegan .

Here we go!

You need:

-350gr of pumpkin
-250gr of spelt flour
-1Tbsp cinnamon
-4 Tbsp stevia (you can add some liquid sugar too)
-1package baking soda
-250- 300ml soymilk
-100ml olive oil

Preparation.
1. Peel your pumpkin and cut it into pieces.
2. Cook it for about 10min. & squish it
3. Add all your ingredients and stir very well
4. Heat your oven to 180degreed
5. Bake for 10-15 minuts & done :)

Veggie noodles

Evening followers,
today was a very long day at university. I've been there from 8 a.m until 18 p.m and I am happy that the day is almost over! When I came home I was very hungry and I decided to cook imediately something yummi for dinner!

As I had a lot of veggies in my fridge, what would be better than some pasta with a homemade veggie sauce?!

What you need (for 2persons)

 2 Tsp.olive oil
 2 garlictoes
 4 bio tomatoes
Tomatoemark
1/2 aubergine
1/2 yellow pepper
1/2 red pepper
 Black olives
 some onion & spring onion
 200 ml Soy cream


Preparation:
1. Cut your tomatoes, the garlic and the onions into small pieces
2. Heat the olive in a pot
3. Add the tomates, the garlic and onions and stir well. Squish the tomatoes a little bit
4.Cut the other veggies into pieces and sear them 3-4 minutes
5. Spice up your tomatoes with salt, pepper & basilic
6. Cook your noodles
7. Add your veggies to your tomato sauce an mix it well
8. Add your soy cream and let everyrhing cook for a few minuts

& it's done! enjoy :)

Motivation Monday: Restart

Happy monday morning followers,
I hope you had a great start into the new even it´s monday.
I have been abesent for a week and a half because a lot was going on. Unfortunately I had no time to workout, but with my polar m400 (Review here) I knew how much I had to move to burn my daily calories. I managed to eat clean almost all the time. I also have been sick for two weeks. So I had no chance to workout for 3 weeks. So I am happy that I can restart again. ( I decided that I eat sweets when I want to and so I did and I lost 2kg without paying to much attention.)

My summer vacation is officially over now & I am going back to my stundents routine. Wake up, make a yummi breakfast, go to university, study, workout and cook healthy & that´s it. When you really wanna stick to this it is as easy as it sounds. I can´t wait to hit the gym tomorrow!
As little restart I have some plans.

1. work my ass off for university
2. go more regularly for outdoorruns
3. hit the gym more intense
4. eat healthy without thinking of food all day long

Today I made some grocery shopping and ass i don´t eat meat when I am at university and even on weekends I do my best. I bought a lot of veggies and fruits.
To start my day I made some vegan cinnamon pancakes with kaki, granatapple and aplle strawberry sauce.

Vegan Chocolate cookies

Hey followers,
today was a rainy day and I had to study for university but I wanted to bake something new. A few weeks ago I bought a Vegan cookingbook. As I love to cook and bake some new vegan stuff I am quite happy about this new book.
It is called: Vegan Book for starters by Attila Hildmann. You can find reciepes to start your day right, to fill your stomach, snacks and drinks and some sweet vegan reciepes.

Today I wanted to try the vegan chocolate chip cookies and here they are

The reciepe is for about 20 cookies.
For all the ingredients I had for about 16€.
  • 70gr dark chocolate (50%cocoa)
  • 50gr macadamia ( I took grounded almonds)
  • 250gr spelt flour
  • 130gr cane sugar
  • 100gr biomargarine
  • 1 Tbsp baking soda
  • 100gr unsweetened soymilk
How to do:
  1. Heat your oven to 180 degrees
  2. Chop your chocolate into small pieces
  3. Mix your spelt flour, sugar, margarine, baking soda and soymilk and stir very well
  4. Then add the nuts and the chopped chocolate
  5. Roll out your dough but pay attention that it is thick enough ( 0,5-1 cm)
  6. Dig out your cookies with a glas
  7. Bake them for about 10-15 min.
Enjoy your cookies with a good glas of soymilk

Autumn October

What a lovely start on 1st October we had with such a sunny day.
It is time to grab your boots out of your cabinet or buy a new pair as I will.
After summer I like autumn quite much. The sun is still there but isn´t as hot as in summer. The leaves turn into a red-yellow-orange pattern and they start to fell of the threes. You have to put on a warmer jacket but not the biggest one you have. Keep that for winter ;)
When I hear October I think about the fallen leaves, the summer whos gone and that after Halloween we are barely two months away from Christmas. OMG!

But first  everything changes. Holidays are almost over. I am stresseed as I have to finish a paper for university. It is time to buy some fall outfits and boots & for sure it is time to bake some pumpkin muffins or cakes. And so will I as soon as I can and I´ll let you know here on the blog.
It is time for some grapes and a fresh pressed apple juice made with apples from our backyard. That´s what I love about autumn.  An for all the Halloween fans. Get dressed up an scare some people. It´s time for some pumpkin ghosts and monsters.
In October I go back to my routine. Wake up, dress up, go to university, work out and go back home for the weekend to spend my time with my boy, family and friends. After a walk in the woods you can cuddle up in a blanket watch a movie with some tea.
There will be some rainy days and the temperature fall down under 10 degrees.
On sunday is fathersday and on wednesday it is my dads birthday. I still need a present even he told that I shouldn´t buy anything but I know that he will be happy when I do! So suprise surprise dad :)

monday thoughts

I hope you are enjoying your monday.
Poor monday is hated by almost everyone. But hey if there wasn´t a monday you wouldn´t love tuesdays. So stay positive.

Well I recognized while I was driving home after work that life can be quite busy and stressful & so is mine at the moment.
Tomorrow is finally my very last day of work for this ´summer´and for once I am happy that all this is over. But I will not chill around all day until university starts, as I still have to write a paper oh yep I ll not think about it until wednesday. I´ll revise some university stuff as the upcoming semester will be exhausting.But as I always say. No pain no gain. I´ll work hard so I´ll be done with my Bachelor the next summer. Yeah I can´t wait1!!

But wait isn´t this all stressfull? Sometimes behind all this working stuff I can´t see my life anymore but that´s because I love to be stressed and when it comes to work I am a real workaholic. Every holidays I work cause hey students life isn´t cheap but I want to go on hoildays and take a little break and go shopping. Ups. For example every morning I am late and I have to run to catch the bus but that´s okay because I hate to wait on the busstation.

But on the other side for me it is perfect when I am busy and I know what to do everyday. I don´t like waking up and not knowing what I ll do today. For everyday I need a plan, and in this plan I also think about chilling reading, going out with friends, do sports or just go for a walk to free my mind.

It is important that you free your mind, take a deep breath of fresh air and just think about yourself and make a little wish and set your goals. I mean don´t listen to others when they are telling you what you should or what you have to do. Take risks. When somebody doesn´t take you as you are they aren´t worth it. Go your own way nobody will find you a job or anything else.
I know I am not perfect but at least I do my best to reach my goals and take care of people I love. the ones who love and the ones that appreciate me. The people who talk behind your back, they are behind yo for a reason. Don´t waste your time forget the people who forgott about you. Enjoy life meet new people, stay up late, be crazy and wear whatever you want to wear ´cause everything has been ´a la mode´once. Have secrets an just live.

& please stop hating mondays ;)

Summer 2k15

Summer is definetly over and winter is coming.
We got some rainy days over here in  Luxembourg so I thought it is time for a little summer 2015 review. For me summer is the most beautiful season and time of the year. (the only exception is christmas )
My summer vacation started on 23 july after I wrote all my exams. Then I jad no time to chill out as I was already working with my beloved kids from 23 july- 14 august.
I met new sweet kids and even made new friends!
As I am working or lets call it, playing-cooking having fun work and I really enjoyed this! Everday at 9 a.m I was at work and prepared my afternoon. I had fun during lunchtime while eating, reversing the theater for the kids or hanging out.
Everyday playing, cooking or having fun with the kids or/ and your friends. When the weather was nice we played with water and had a refreshment snacks/drinks and when it was cold we warmed up and ate a hot snack!
We even had 2sleepowers with a good dinner and a little creepy nightgame in the woods.
I mean could you imagine a better work?
I DON'T. This is already the 3rd time I am spending my summer like this and I love it.
I even had time to have a sushi girlsnight with my loves Linda and Julie.

So one entire month I enjoyed my work with the kids, my friends and even my boyfriend.
After work we spent some evenings together.

When I was done working with the kids on 14 august I went on holiday were.  Check out my post about my holidays and click here.
Back home I had some great days with friends at the biggest funfair in luxembourg called Schueberfouer or we were just hanging out.

Then I also had to study for university. But I don´t wanna talk about university right now ;)

And to end my summer I am working again for 3 weeks.
